1 medium-large sweet potato
1 T. olive oil
salt
freshly ground pepper

Directions to make So Easy Roasted Potatoes

Step 1:

Heat oven to 425°F. Cut the potato in half lengthwise, then cut each half into 7 long, thin wedges. Place them on a rimmed baking sheet and toss them with the oil and salt and pepper to taste, so all sides are coated.

Step 2:

Bake 10 minutes. Flip the potatoes over and bake another until tender, another 8 to 10 minutes. Serve hot.

1.5 kg. chicken cut up into serving pieces
1½ tbsp. flour
3 tsp. salt

70 g. pure olive oil
125 g. (½ tea cup) white wine
125 g. (½ tea cup) pure orange juice

Directions to make Tender Baked Chicken and Sauce

Step 1:Preheat the oven to 180-200 C. (medium). Season the chicken pieces with the flour, salt, and pepper.
Step 2:Heat the olive oil in a pan and fry gently and rapidly on all sides for 2-3 minutes. Place the chicken in a heat-proven dish and remove the pan from the hot ring.
Step 3:Add the wine and orange to the pan while the pan is still hot, mix it with the remaining oil and pour the sauce over the chicken. Cook in the oven for 1½ hour or less, basting it frequently with the sauce.

Ingredients to make Oatmeal Cookies with Apple

4 1/2 oz (130 g) uncooked quick oats, toasted (lightly browned)
1/2 cup all-purpose flour
1/2 tsp cinnamon
1/4 tsp baking soda
1/4 tsp salt
1/4 cup light brown sugar
1/4 cup low fat spread
1 large apple cored and grated
1 egg
1/2 tsp vanilla extract
1/3 cup tsp dark raisins

Directions to make Oatmeal Cookies with Apple

Step 1:Preheat oven to 180 C (350F). Spray 2 baking sheets with nonstick cannola oil spray.
Step 2:In a large bowl, mix the oats, flour, cinnamon, baking soda and salt, and set the mix aside. In another bowl, whip the brown sugar together with the low fat spread till the mixture goes light and fluffy.
Step 3:Add the grated apple, egg and vanilla extract, and beat until well blended. Add the oat mixture to the egg and apple blend, mix well, and add the raisins. With an ice cream scoop, spoon the dough and drop onto the baking sheets forming 24 equal cookies and leaving 2 inches distance between each cookie.
Step 4:Now flatten each cookie with spatula, and bake in center of middle oven rack 12-15 minutes, until the low fat apple and oat cookies go lightly browned.

Ingredients to make Easiest Ever Baked Salmon

3 1/2 lb Salmon
1 Lemon
Salt and Pepper
1 tb Oil or Softened Butter

Directions to make Easiest Ever Baked Salmon

Step 1:Lay a piece of silver foil, large enough to wrap the salmon in a very loose parcel, on a baking tray. If the salmon is to be served hot, grease the foil with the butter, or use the oil if serving the salmon cold. Thinly slice the lemon and put about half on the foil.
Step 2:Put the salmon on top, with a few slices of lemon inside and lay the rest of the lemon along the top of the salmon. Season generously and wrap loosely, making sure the edges are securely folded together so that no steam can escape. Bake 350 for 10 minutes per pound.
Step 3:If serving hot, take it out of the oven and let it stand for a further 10 minutes.
Step 4:If serving cold, leave the salmon in the foil for two to three hours. To serve: Unwrap the fish and gently pull off the skin.

4 oz Unsweetened Chocolate, broken into 1/2 oz pieces

12 T Unsalted butter
1 t Pure Vanilla extract
2 c Semi sweet chocolate chips

Step 1:Sift all dry ingredients together. And set aside. Melt chocolate in double boiler.
Step 2:Cream butter with light brown sugar, then add eggs and vanilla to this mixture. Add the melted chocolate next and after that is completed mixed, add the dry ingredients. Mix well and then add Chocolate chips.
Step 3:Bake for 18-22 minutes in a preheated 325 degree oven.
